These sheets pan chicken thighs and veggies are my answer to those nights when everyone is hungry and I have zero energy to cook. You toss everything in one bowl, spread it on one pan, and let the oven do the work. Best of all, dinner is on the table in about 40 minutes, and cleanup takes almost no time.
The flavor comes from a simple mix of lemon juice, garlic, and rosemary. It tastes fresh and bright, yet it uses ingredients you probably already have in your kitchen. Meanwhile, the boneless, skinless chicken thighs stay juicy in the oven, and the potatoes, carrots, and green beans roast right alongside them.
As a dietitian, I love that this is a complete meal on one pan. Each serving gives you about 38 grams of protein and 6 grams of fiber, so it keeps you full and satisfied. As a busy mom, I love that my family actually eats it! In addition, the leftovers make an easy lunch for the next day.

Variations of Sheet Pan Chicken and Vegetables
One of the best things about a sheet pan dinner is how flexible it is. Use this recipe as your base, then swap in whatever your family likes or whatever you already have in the fridge.
Chicken Thighs vs. Chicken Breasts: I love boneless, skinless chicken thighs because they stay juicy and tender. However, chicken breasts work too if you prefer a leaner cut. Simply slice thick breasts in half lengthwise so they cook evenly, and start checking them a few minutes early. Either way, aim for an internal temperature of 165°F.
Swap the Potatoes: Baby potatoes are quick to prep, but sweet potatoes or Yukon Gold potatoes also roast beautifully. Just be sure to cut them into small, even pieces so they finish cooking at the same time as the chicken.
Change Up the Veggies: This recipe works with almost any roast-friendly vegetable. For example, try Brussels sprouts, broccoli, cauliflower, bell peppers, or zucchini. Since softer veggies like zucchini and broccoli cook faster, add them when you stir the pan at the 15-minute mark.
Switch the Seasonings: Lemon, garlic, and rosemary give this dish a classic roasted flavor. However, you can easily change it up:
- Italian seasoning + lemon for a bright, herby flavor
- Smoked paprika + cumin for a smoky flavor
- Fresh thyme or oregano in place of the rosemary
Use a Different Oil: No avocado oil? No problem. Olive oil works just as well.
FAQ Sheet Pan Chicken Thighs and Veggies
How long do you bake boneless chicken thighs at 425°F?
Boneless, skinless chicken thighs take about 30 minutes at 425°F. However, ovens vary and so does the size of the chicken. Therefore, the best way to check is with a meat thermometer. The chicken is done when it reaches 165°F in the thickest part.
Can I use bone-in chicken thighs?
Yes! Bone-in thighs simply need more time, usually 35 to 45 minutes. To keep the veggies from overcooking, cut them into larger pieces or add the green beans halfway through.
Why are my veggies soggy instead of roasted?
An overcrowded pan is usually the culprit. When the food is piled up, it steams instead of roasts. Therefore, spread everything into a single layer. If your pan looks too full, divide the chicken and veggies between two sheet pans.
Are sheet pan chicken thighs and veggies healthy?
Absolutely. This meal gives you lean protein, fiber-rich vegetables, and a healthy fat all on one pan. As a dietitian, I love any dinner that pairs protein with fiber, because that combination helps you stay full and supports steady energy.
Can I prep this sheet pan dinner ahead of time?
Yes, and it makes busy nights so much easier. Chop the veggies and mix the oil, lemon juice, garlic, and seasonings earlier in the day. Then store them in the fridge until you are ready to toss everything together and bake.
Is this recipe gluten-free?
Yes. This recipe is naturally gluten-free and dairy-free, so it works well for a variety of eating styles.
How to Store and Reheat Sheet Pan Chicken Thighs and Veggies
This sheet pan meal stores and reheats beautifully, which makes it perfect for meal prep or leftovers.
Store: Allow the chicken and vegetables to cool completely. Then transfer them to an airtight container and refrigerate for up to 3 days.
Reheat: Warm individual portions in the microwave for 1 to 2 minutes, or until heated through. If you prefer crispier veggies, reheat in a 350°F oven or air fryer for 5 to 7 minutes instead.
Freeze: Place the cooked chicken and vegetables in a freezer-safe container or bag and freeze for up to 3 months. Then thaw overnight in the refrigerator before reheating. Keep in mind that the potatoes and green beans will be a little softer after freezing.
What to Serve with Sheet Pan Chicken and Vegetables
This recipe is a complete meal on its own, since you already have protein, veggies, and a starch on one pan. However, a simple side can stretch it further for a hungry family. Here are a few of our favorites.
- A crisp side salad: Mixed greens with cucumbers, tomatoes, and a light vinaigrette add a fresh crunch.
- Brown rice or quinoa: Both soak up the lemony pan juices and add extra fiber.
- Whole grain rolls: They are an easy way to round out the plate for big appetites.
- Fresh fruit: Sliced apples, berries, or grapes make a simple, kid-friendly side.
- Plain Greek yogurt sauce: Stir in a squeeze of lemon and a little garlic for a quick, high-protein dip.
