  • 6 Eggs
  • 1 medium Orange bell pepper chopped
  • 1 cup Mushrooms sliced
  • 1/2 tsp Salt
  • 1/2 tsp Ground black pepper
  • 1/4 cup Feta cheese crumbles
  • 5 oz Low fat cottage cheese
  • Nonstick cooking spray

Instructions
 

  • Preheat your oven to 400℉ and spray a medium baking dish with non-stick cooking spray.
  • Chop the orange pepper and mushrooms.
  • In a large bowl, combine the eggs, low-fat cottage cheese, salt, pepper, and chopped vegetables. Whisk everything together until well mixed.
