Peanut Butter Baked Oatmeal
Peanut butter baked oatmeal combines rich and creamy peanut butter with whole grain oats for an amazing breakfast meal prep.

- 2 Cups Rolled oats
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1 tsp Ground cinnamon
- 1 tbsp Ground flax seed
- 1 tbsp Maple syrup
- 1/2 Cup Peanut butter, creamy
- 1 large Egg
- 1 1/2 Cupa Skim milk or milk of your choice
- 1/2 tsp Vanilla extract
Preheat oven to 350℉
Spray a square 8x8 baking pan with nonstick cooking spray.
Mix first 5 dry ingredients together in large mixing bowl: oats, baking soda, salt, cinnamon and flax.
Pour wet ingredients into the bowl and mix well: maple syrup, peanut butter, egg, milk and vanilla extract. (it will be runny)
Pour mixture into the baking pan.
Bake for 30 minutes or until edges are brown. Sometimes it cracks when you bake, that's ok.
Melt 2 tsp of peanut butter in microwave, ~30-45 seconds and the drizzle on top when it comes out of the oven.
Cool for 10 minutes before slicing.
