Peanut Butter Baked Oatmeal

Peanut butter baked oatmeal combines rich and creamy peanut butter with whole grain oats for an amazing breakfast meal prep.

Ingredients
  

  • 2 Cups Rolled oats
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1 tsp Ground cinnamon
  • 1 tbsp Ground flax seed
  • 1 tbsp Maple syrup
  • 1/2 Cup Peanut butter, creamy
  • 1 large Egg
  • 1 1/2 Cupa Skim milk or milk of your choice
  • 1/2 tsp Vanilla extract

Instructions
 

  • Preheat oven to 350℉
  • Spray a square 8x8 baking pan with nonstick cooking spray.
  • Mix first 5 dry ingredients together in large mixing bowl: oats, baking soda, salt, cinnamon and flax.
  • Pour wet ingredients into the bowl and mix well: maple syrup, peanut butter, egg, milk and vanilla extract. (it will be runny)
  • Pour mixture into the baking pan.
  • Bake for 30 minutes or until edges are brown. Sometimes it cracks when you bake, that's ok.
  • Melt 2 tsp of peanut butter in microwave, ~30-45 seconds and the drizzle on top when it comes out of the oven.
  • Cool for 10 minutes before slicing.
